Preheat oven to 425 degrees F and line a large baking sheet with parchment paper. Mix the seasonings together. Use a paper towel to blot the chicken thighs dry, then place in a bowl. Drizzle with 1 tbsp olive oil and sprinkle with dry seasonings, then use your hands to coat the thighs, rubbing the seasonings into the skin. Place on the sheet pan and bake for about 45 minutes (check and temp at 30-35 minutes; if they read at least 165, proceed to next step). Then CLOSE THE DOORS TO SENSITIVE ROOMS, turn the oven to broil, and cook 5 minutes longer to crisp the skin. While broiling, watch it very very closely because it's going to be highly flammable between the paper and the rendered chicken fat.
Enjoy! Consider spooning the rendered fat over couscous, other pasta, potatoes, or bread for a calorie-free treat!
Calories: About 150 per thigh (which is 1/4 recipe).
Spice mix makes enough for six thighs at least, probably even eight if you were to be careful about sprinkling it about. Note also that the spice will continue to compound in the fridge.
